Nothing says backyard parties like pork carnitas, and making this spicy citrus dish in the slow cooker is so easy.
Ingredients
- 1 (3 lb) pork shoulder
- 4 cloves garlic
- 2 tbsp coarse sea salt
- 1 tbsp ground cumin
- 1 tsp cinnamon
- 1 tsp cayenne pepper
- 2 limes
- 1 cup light beer or chicken broth
- 1 cup orange juice
Steps
- Set the pork shoulder in the bowl of a 6 or 7 quart slow cooker. Smash the garlic and add to the pork. Set salt, cumin, cinnamon, and cayenne pepper in a small bowl. Juice the limes.
- Pour beer and orange juice into the slow cooker along with the lime juice. Add the spices. Use tongs to rotate pork shoulder until spice mixture and liquid are combined.
- Set temperature to low, and cook for 7 hours or until shoulder is fork-tender and falling apart. Remove pork from slow cooker and discard cooking liquid. Shred meat with fork and season with salt (in moderation) and pepper to taste. Serve in tacos, burritos, or a la carte with your favorite fixings.
