Meaty eggplant takes center stage in this main dish. Chili powder and paprika bring enough flavor to satisfy even the biggest carnivores.
- 2 large eggplants
- ½ cup olive oil
- 2 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ cup Nature's Promise Organic Original Barbecue Sauce
- 2 tbsp fresh parsley
- Set grill to medium. Cut the eggplant lengthwise into ¾-inch-thick slices. In a small bowl, combine the oil, chili powder, paprika, and garlic powder. Brush oil mixture all over eggplant slices and season with salt and pepper.
- Place eggplant on grill. Cover and cook 5 min. per side, until mostly tender. Brush tops with some of the barbecue sauce and turn eggplant slices over using a wide spatula. Brush other side with some of the barbecue sauce and grill 1 min. Turn eggplant slices over. Continue brushing and turning eggplants occasionally until very tender. Transfer to serving platter.
- Finely chop the parsley and sprinkle over eggplant steaks.
