Grape tomatoes take on another form when roasted to caramelization. From side dish to condiment to pasta sauce, the uses are endless.
- 3 cloves garlic
- 4 pints grape tomatoes
- 2 tbsp olive oil
- 6 sprigs thyme
- Preheat oven to 400°F. Thinly slice the garlic cloves.
- Onto large rimmed baking sheet, add garlic, tomatoes, oil, thyme, salt, and pepper. Toss to combine.
- Roast 30 min., until tomatoes are caramelized and softened, stirring once halfway through. Discard thyme and serve.
