Use these baby potatoes as a side dish or toss with greens and top with fried eggs to easily transform into a meal.
- 2 lbs baby potatoes
- 2 tbsp olive oil
- 1 tbsp Italian seasoning
- Preheat oven to 425°F. Halve each potato and add to a large rimmed baking sheet.
- Onto baking sheet, toss potatoes with oil, Italian seasoning, salt, and pepper.
- Roast 30–35 min., until tender, stirring once halfway through.
