Just because you’re gluten-free doesn’t mean you can’t enjoy comfort food. This version of a childhood fave keeps all the familiar flavors but uses gluten-free crumbs instead of wheat.
Ingredients
- 2 tbsp olive oil
- 1 (8 oz) container diced peppers
- ½ cup diced onions
- 1 tbsp minced garlic
- ¾ cup gluten-free panko bread crumbs
- ¼ cup whole milk
- 2 large eggs
- 1 lb 90% lean ground beef
- 1 lb ground pork
- Ketchup, optional
Steps
- Preheat oven to 450°F. Line a rimmed baking sheet with foil. In a 12-inch skillet, heat the oil on medium-high. Add the peppers, onions, and garlic. Season with salt. Cook 3 min., stirring often. Let mixture cool slightly.
- Meanwhile, in a large bowl, mix the bread crumbs, milk, and eggs. Add vegetable mixture to bowl, along with beef and pork. Gently mix until combined.
- Divide meat mixture into 3 mounds on the baking sheet. Shape each into a 3-inch-wide, 7-inch-long loaf. Bake 25 min., until internal temperature reaches 160°F.
Tips
Just slather the top with ketchup just before placing it in the oven. Garnish with chopped parsley.
