Sweet corn and creamy yogurt take avocado dip in a different direction from your usual guacamole. Serve as a dip or slathered on a veggie sandwich.
Ingredients
- 3 green onions
- 2 ripe avocados
- 2 tbsp lime juice
- 2 tbsp olive oil
- ΒΌ cup nonfat Greek yogurt
- 1 cup fresh or frozen (thawed) corn kernels
Steps
- Finely chop the green onions. Peel and pit the avocados and add to a medium bowl along with the lime juice, oil, and yogurt. With a fork, mash to combine.
- Fold in the corn and green onions. Season with salt and pepper to taste. Serve immediately with flatbread, crackers, or fresh vegetables.
