A quick turn on the grill is all you need to enhance the juicy sweetness of ripe summer melon. Salty cheese and crunchy nuts turn this into a sophisticated side.
Ingredients
- 1 small cantaloupe
- ¼ cup smoked almonds
- 3 cups arugula
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- ¼ cup crumbled feta
Steps
- Set grill to medium-high. Cut the cantaloupe in half. With a spoon, scrape out and discard seeds. Cut peel off cantaloupe. Cut each half into 1-inch-wide wedges.
- Grill cantaloupe 2 min. per side, until grill marks appear. Remove from grill and place on a paper towel. Let cool slightly.
- Meanwhile, finely chop the almonds. On a large platter, arrange the arugula and top with cantaloupe wedges. Drizzle the oil and vinegar over cantaloupe. Sprinkle the feta and almonds on top. Season with salt to taste.
