This easy 5-ingredient recipe—called pan con tomate in Spain—is a great appetizer or snack. Grating the sweet tomatoes makes them perfect for spooning over the grilled bread.
Ingredients
- 1 French baguette
- 5 tbsp olive oil, divided
- 3 large ripe tomatoes
- 1 tbsp sherry vinegar
- 2 cloves garlic, halved
Steps
- Set grill to medium. Cut the baguette into slices at an angle. Brush bread with 3 tbsp oil.
- Place a box grater in a medium bowl. Halve the tomatoes and coarsely grate over the bowl, starting with cut sides. Stir in the sherry vinegar and remaining 2 tbsp oil. Season with salt and pepper to taste.
- Grill baguette slices 1–2 min. per side, until lightly toasted. Rub the garlic cloves on toasts. Spoon tomato mixture onto toasts and serve immediately.
Tips
For an easy upgrade, top the tomato toasts with grated Manchego cheese, thinly sliced roasted red peppers, or strips of serrano ham or prosciutto.
