Get this easy but elegant pasta dinner done in just 20 minutes by boiling the peas with the rotini and steaming the salmon in the microwave.
Ingredients
- 12 oz rotini
- 1 cup frozen peas, thawed
- 12 oz salmon fillets
- ¾ cup light sour cream
- 3 tbsp chopped fresh dill
Steps
- Cook the pasta according to package directions. Add the peas to boiling water 2 min. before pasta is done. Reserve ½ cup cooking liquid before draining in colander. Return pasta and peas to pot.
- Meanwhile, arrange the salmon fillets in a microwave-safe baking dish. Season with salt and pepper. Cover with vented plastic and microwave 4 min., until cooked through. Remove and discard skin from salmon. Use a fork to flake salmon into bite-size pieces.
- To pot with pasta and peas over low heat, stir in the sour cream, adding cooking liquid 2 tbsp at a time, as needed. Season with salt and pepper. Remove from heat and toss with the dill and salmon.
