This viral pasta is a hearty meal packed with spinach and roasted tomatoes. It’s an easy and inexpensive dinner the whole family will love.
Ingredients
- ½ (16 oz) bag frozen chopped spinach
- 1 pint grape tomatoes
- ¼ cup olive oil
- ½ tsp dried oregano
- 1 (8 oz) block feta cheese
- 1 (12 oz) box farfalle
Steps
- Preheat oven to 425°F. Spread out the frozen spinach in the bottom of a 9x13-inch baking dish. Top with the grape tomatoes, oil, and oregano. Season with salt and pepper. Place the feta cheese block in center of dish on top of spinach.
- Bake 40–45 min., until feta is melty and creamy and tomatoes have burst. Meanwhile, when tomato mixture is almost done, bring a large pot of salted water to a boil on high and cook the farfalle according to package directions. Drain well.
- Remove baking dish from oven and add drained pasta. Toss to combine and serve immediately.
