Strawberry shortcakes meet pancakes in a healthy take on a favorite dessert. Smother these delicious gluten-free pancakes in an easy sauce made from fresh berries.
Ingredients
- 2 cups fresh mixed berries
- 1 tbsp sugar (optional)
- 1 large egg
- 2 tbsp olive oil
- ¾ cup low-fat milk
- 1 ½ cups Nature's Promise® Gluten Free Pancake and Waffle Mix
- Cooking spray
- Whipped cream, for garnish
Steps
- Hull and thinly slice the strawberries, if using. To a cutting board, add about ½ cup mixed berries and gently smash with a fork. Place in a medium bowl with remaining berries, sugar if desired, and 2 tbsp water; toss to combine.
- In a large bowl, whisk together the egg, olive, and milk until well combined. Add the pancake mix and stir until just combined (some lumps are okay).
- Spray a 12-inch nonstick skillet or griddle with the cooking spray and heat on medium-high. Add ¼-cup scoops of batter to skillet and cook 1–2 min., until edges begin to set and bubbles start to form. Flip pancakes and cook 1 min., until bottoms are golden brown. Repeat until all pancakes are made. Serve pancakes with berry mixture and whipped cream.
