Mint sugar makes this dish even fresher and sweeter. The balsamic vinegar brings out the flavor of the fruit.
Ingredients
- 1 cup loosely packed mint
- 3 tbsp granulated sugar
- 1 ⅔ cups strawberries
- 1 cup blueberries
- 1 cup raspberries
- ¾ cup pomegranate seeds
- 2 tbsp white balsamic vinegar
Steps
- Remove the leaves from the mint. With mortar and pestle, grind half the mint leaves with the sugar till well blended.
- Trim and halve strawberries.
- In a large bowl, combine strawberries, blueberries, raspberries, pomegranate seeds, and balsamic vinegar. Sprinkle with the mint sugar and toss gently.
- Garnish with the remaining mint leaves and serve.
